2 1/2 pounds small creamer potatoes, scrubbed
1 tablespoon plus 2 teaspoons coarse salt
½ cup extra-virgin olive oil
1 1/2 cups milk
1/2 cup pitted coarsely chopped black olives
¼ teaspoon freshly ground pepper
¼ cup fresh basil leaves, sliced ¼ inch thick

Directions:

1. Place potatoes in a medium saucepan; add water to cover, and bring to a boil over high heat. Add 1 tablespoon salt, and cook until tender, about 25 minutes. Drain.

2. Transfer to a large bowl, add olive oil, and mash with a potato masher or fork.

3. In a small saucepan, heat milk to a simmer over medium-low heat. Pour hot milk over the potatoes, and stir to combine. Stir in olives, remaining 2 teaspoons salt, and pepper. Just before serving, garnish with basil.
