4 egg yolks
1/2 cup half and half
1 pound Brie cheese, mashed
1 teaspoon salt
4 egg whites
1 8-inch pie crust
sour cream (optional)
caviar (optional)

Directions:
Directions:
Beat egg yolks and half and half. Add Brie and salt;
mix thoroughly. Beat egg whites until stiff. Stir one
third of the egg whites into the Brie mixture.
Gently fold in rernaining egg whites. Place pie in
an 8-inch tart pan or pie plate. Bake at
350 degrees for 10 minutes. Pie crust will be only
partially cooked. Pour mixture into crust. Bake at
350 degrees for 30 minutes or until set. Cut into
wedges to serve. Garnish with sour cream and
caviar, if desired.

Quiche can be baked in individual tart shells. Cut
pie crust into rounds and press into muffin tins or
individual tart pans.
