1 c uncooked wild rice
1 1/2 c uncooked white rice
2 boxes fresh mushrooms
2 - 10 oz cans low sodium beef broth
3 cups low sodium chicken broth
1 c slivered unsalted almonds
4 Tbsp sliced scallions
3 Tbsp parsley

Directions:
Directions:
Saute mushrooms in a stick of butter, add wild rice, almonds and onions for about 5 minutes. Add enough water to beef broth to make 3 cups. Mix rice mixture and put in 3 quart casserole. Cover tightly and bake at 350º for 1 hour or until rice is fluffy.
