2 cups water
1 chicken bouillon cube
1/2 lemon peel, grated
1 cup raw regular rice
1 1/2 cups cubed cooked chicken
1 can sliced black olives, drained
1/4 cup sliced green onions
2 oranges, peeled and cut into half cartwheel slices
Fresh Orange Dressing (follows)
Salad Greens

1 orange - juice
3 T vegetable oil
1/2 tsp celery salt
1/2 tsp dried tarragon leaves, crushed
1/8 tsp paprika

In a saucepan, bring the water to a boil with the bouillon cube and orange peel. Add rice and return to a boil. Reduce heat; cover, and simmer for 20 minutes, or until liquid has been absorbed. Cool slightly.
In a bowl, combine rice, chicken, olives, green onions, and orange slices. toss gently with the dressing; cover and chill. To serve, arrange on salad greens on individual serving plates.

In a jar with a lid, combine all the ingredients and shake well.
