4 cups of tomato juice, 1 pint of fresh salsa, 2 red peppers chopped, 1 cucumber chopped, 1 cup of croutons, 1/2 cup of chicken broth, 1/3 cup cilantro, 4 large garlic cloves, 2 Tbsp balsamic or red wine vinegar, 1 Tbsp of olive oil, 1 tsp cumin, Tabasco sauce, pepper.

I know it sounds funny adding the salsa, but it give it a nice overall flavor, and the added vegetables really make it taste fresh. I would try to use a fresh salsa, for the best results.
Chop everything and blend all ingredients, but not too smoothly. It's nice to get such small chunks of vegetables.

Let it sit in refrigerator for 2 hours. Add pepper before serving and top with croutons.
