1 zucchini
I carrot
1 yellow squash
2 tablespoons diced pimiento
3 tablespoons Italian salad dressing
I tablespoon prepared mustard
5 heads Belgian endive, washed and separated

Directions:
Grate zucchini, carrot and squash. Blanch 10 seconds. Rinse under cold water. Add remaining ingredients, except Belgian endive, and stir to combine. Chill. Place a rounded teaspoon of mixture onto each endive leaf. Serve chilled.
