Hambone with meat to total 1 to 1-1/2 lbs ham

2T olive oil
2 onions, chopped
2 carrots, peeled and finely chopped
2 stalks celery, chopped
4 bay leaves
3 qts water

2 1-lb bags split peas, rinsed
1 tsp dried thyme

Directions:
Directions:
Saute onions, carrots and celery until tender--about 6 mins.
In slow cooker, combine hambone, celery, carrots, onions, bay leaves and water. Cook on high until simmering, and simmer 2 to 2 1/2 hours or until ham is tender and can be removed from bone. Shred meat into small peices and return to stock.
Add split peas and thyme. Simmer uncovered 1-2 hours, until peas dissolve and thicken soup. Remove bay leaves and serve.
