Ingredients:  
1 can(drained) or frozen cut okra
1/4 cup onion (chopped)
1/4 cup green pepper (chopped)
3 T butter
4 cups chicken broth
1 cube chicken bouillon
1 can tomatoes (diced) with juice
1 small bay leaf
Salt and Pepper to taste
2 large chicken breast cooked (diced)
1 tsp. parsley
3/4 cup rice (uncooked)

Directions:
Directions:
Boil chicken breast in 4 cups water, chicken bouillon cube until tender. Save chicken broth. Put aside to cool. In large pot, saute onion and green pepper in butter. Dice chicken. Add chicken broth, chicken, tomatoes, bay leaf, salt, pepper, parsley, okra and rice. Bring to boil, reduce heat and simmer for 30 minutes. Remove Bay Leaf and serve warm.
