Whites of 8 eggs
1 tsp cream of tartar

3/4 cup sugar

Yolks of 8 eggs
3/4 cup sugar
Zested orange rind and juice of 1 large orange

1 cup cake flour

Directions:
Directions:
Beat egg whites until stiff.
Add cream of tartar. Beat again.
Add 3/4 cup sugar. Beat again.

Separately mix together, then add to beaten egg whites:
Egg yolks
3/4 cup sugar
Orange rind and juice

Fold in 1 cup of cake flour

Put mixture in Angel food cake pan. Bake at 325º for one hour. When done, invert pan before moving cake.

This recipe is from the two spinster sisters who lived down the street from us when we were growing up. They would make this cake for our birthdays every year. The top of the cake was covered with a thin white icing that drizzled part of the way down the sides. This cake is a real treat.
