1 cooked Chicken, de-boned and cubed
1/2 c. soy sauce
1/2 c. sugar
2 T. mirin, sherry, or white wine
2 t. grated fresh ginger
1 garlic clove, minced
1/2 t. cornstarch
1/8 t. red pepper flakes
2 scallions, sliced thin

Whisk soy sauce, sugar, mirin, ginger, garlic, cornstarch, and pepper flakes together. Add sauce to skillet and cook on medium heat. Simmer sauce until slightly thickened, about 2 min. Add cubed chicken to sauce and heat through. Serve over white rice.

This recipe is so fast and easy to make. The fresh ginger and red pepper flakes add some nice heat to the Teriyaki. You can make this with flank steak as well. This is one our family's favorite dinners.
