1 8oz box dried cut Ziti
3 Tbsp unsalted butter
3 medium onions, cut into thin wedges, or 5 medium leeks, sliced
2 cloves garlic, minced
1/4 cup flour
1/2 tsp dried thyme
1/8 tsp black pepper
1-1/2 cups half & half, or milk
1-1/2 cups chicken broth
2 cups fully cooked ham, cubed
1 10 oz pkg frozen chopped spinach, thawed

Cook pasta according to package directions. Drain, rinse with cold water, and drain again.
In a large saucepan, melt the butter. Add the onion or leeks, and the garlic. Cook for about 5 minutes or until onions are tender, stirring occasionally. Stir in the flour, thyme and pepper. Cook 1 minute. Add the half & half or milk, and the chicken broth, all at once. Cook, stirring until thick and bubbly. Stir in the pasta, ham and spinach. Mix well.. Spoon the mixture into a 3 quart casserole.
Cover and bake in a 350º oven for 30 to 35 minutes. Let stand for 5 minutes. Stir gently before serving.
