1 cup finely chopped carrots
1 cup finely chopped potatoes
1/2 cup melted shortening
2 cups raisins
1 tsp. cinnamon
3/4 tsp. salt
1 cup sugar
1 1/4 cup flour
1 tsp. nutmeg
1 tsp. soda
1 egg
2 T. corn syrup
2 T. cocoa

Directions:
Directions:
Sift flour with other dry ingredients, except sugar, and add raisins. Add sugar, shortening, egg, carrots and potatoes. Steam approximately 3 hours.
Top with caramel sauce.

Caramel Sauce
1 1/2 cup brown sugar
2 1/2 cup water
Boil and thicken with corn starch
