4 tbsp butter
4 tbsp flour
1 1/2 cup milk
1/2 tsp salt
pepper
1 cup cheese - grated
3 eggs

Directions:
Directions:
Melt butter in top of double boiler, add flour, salt, pepper and mix well. Gradually add milk, stirring constantly and cook until thick. This may be made ahead of time and kept in the refrigerator and reheated when ready to use.

Add cheese to the hot sauce. Add beaten egg yolks and stir well. Fold in stiffly beaten egg whites.

Pour in greased baking dish. Place in pan of hot water and bake at 350º for 45 minutes. Serve at once.
