3/4 cup chopped onion
3/4 cup chopped celery
1 clove garlic, minced
2 Tbsp oil
6 cups water
1 x 28oz can tomatoes
3/4 cup dry lentils
3/4 cup barley
7 stock cubes
1/2 tsp rosemary
1/2 tsp oregano
1/4 tsp pepper
1 cup sliced carrots
1 cup shredded Swiss cheese
1lb Italian sausage, cut into bite-size pieces

Brown sausage in oil, remove and cut in small pieces. Put back in pan and add onion, celery and garlic and cook until vegetables are soft – add water, stock cubes, tomatoes, barley, lentils, herbs and pepper –bring to the boil, reduce heat and simmer for 45 minutes, add carrots and cook for a further 15 minutes. Ladle into bowls and serve topped with grated cheese.
