1c vegetable oil
1c sugar
1c orange juice
4 lg. eggs
1tsp. anise or vanilla extract
6 c flour
6 tsp. baking powder
1 tsp.baking soda

Glaze:
Confectioners Sugar
water with anise or vanilla extract
colored sprinkles, if desired

Number of Servings: About 4-5 dozen
Preparation Time: About 30 minutes plus baking time

Mix all liquid ingredients, sugar and eggs together. When combined, add dry ingredients and mix just until incorporated. Grease cookie sheet(s) and drop by heaping teaspoonfuls onto sheet and smooth tops. Bake at 350º F for 8 to 10 minutes. Let cool before glazing.

Mix 1 tsp of anise or vanilla extract and 1/2 cup of water together in a glass measuring cup. In a small bowl place 2 c. confectioner sugar then mix liquid a little at a time, you may not need all the liquid. Glaze cookies and top with sprinkles.

These cookies are very easy to make. The only difficulty is getting the glaze to the right consistency. It should be thin enough to pour from a spoon yet thick enough to stay on the cookie. But even if it isn't quite right, the Anginetti are delicious.
