1 lbs. spaghetti
3 tbsp. butter
4 slices bacon chopped
1 large onion finely chopped
1 medium carrot finely chopped
1 stalk celery finely chopped
2 tbsp. oil
1/3 lbs. ground beef
1/3 lbs. ground pork
1/3 lbs. ground veal
1/2 cup white wine
2 cups good beef stock
3 tbsp. tomato paste
1 tsp. dried oregano
Pinch of grated nutmeg
Salt and pepper to taste
1 cup heavy cream
Grated Parmesan cheese

1. Melt butter in large Dutch oven and saute the chopped bacon, onion, carrot and celery
2. Cook uncovered stirring frequently for about 10 minutes and then take off the burner and set aside
3. Heat the oil in a heavy frying pan and add all the meat breaking up any lumps with a spoon until the mixture is brown and crumbly and then pour off the accumulated fat using lid of pan
4. Put the meat back on the fire and stir in the wine and cook over high heat until most of the wine has evaporated about 10 minutes
5. Transfer the meat to the Dutch oven with the vegetables and bacon and stir in the beef stock, tomato paste, oregano, nutmeg, salt and pepper
6. Simmer the sauce only partially covered until it has reduced to a thick sauce about 40 to 60 minutes
7. Add all or some of the cream but do not boil again
8. Meanwhile cook the spaghetti in boiling water with salt until al dente about 20 minutes and drain
9. Add the pasta to the sauce or spoon the sauce over the pasta and top with grated Parmesan cheese
