Ingredients:  
1 1/2 pounds skinless salmon filet, cut into large chunks (1 can or 2 pouches of salmon will work)
2 tbsp. capers, chopped
Grated peel of half a lemon, reserve 1/2 for squeezing
1/3 c. finely chopped fresh parsley
2 tsp. seafood seasoning
salt and pepper
1 egg
1/2 c. bread crumbs
1 tbsp. olive oil
1/4 cucumber, seeded and chopped
2 tomatoes, seeded and chopped
1/2 small red onion, chopped
1/2 c. Dijon mustard
3 tbsp. fresh dill, finely chopped
4 buns

Salmon Burgers:
Mix salmon, caper, lemon peel, parsley, seafood seasoning, salt and pepper, egg, and bread crumbs. Form into 4 patties. In a non-stick skillet heat the olive oil. Add patties when oil is hot. Cook till brown on each side and done.

Topping:
In a small bowl, combine cucumber, onion, and tomatoes.

Sauce:
In a small bowl, mix mustard and dill.
