16 asparagus sprigs

8-16 pieces of thin prosciutto or Black Forest ham [if large slices, I cut them in half]
1 C strawberry or raspberry vinaigrette [recipe below]

Directions:
Directions:
Cook asparagus until tendercrisp and color remains vibrant green. [I microwave the asparagus then put into ice cold water bath for a few minutes to stop cooking process, then dry the sprigs off]. When asparagus is cool, wrap prosciutto or ham around asparagus and drizzle with vinaigrette [see below].


To make vinaigrette:

¼ C strawberry or raspberry vinegar
2 T honey
¾ C canola, safflower or corn oil [don’t use olive oil—it turns cloudy when refrigerated]

Whisk oil into vinegar until slightly thickened. Add honey and whisk in. Add pinch of salt and pepper. Pour over wrapped asparagus sprigs and let marinate in frig for 30-60 minutes.

I only us Boar's Head Ham or another premium quality deli meat.
