2 C flour
1 ½ tsp baking powder
½ tsp baking soda
1 egg
¼ C shortening [margarine]
1 tsp salt
1 x 2” piece orange rind
1 C sugar
¾ C orange juice
1 C walnuts
1 C fresh cranberries

Directions:
Directions:
Preheat oven to 350° Grease loaf pan with Pam spray. Sift flour, baking powder and baking soda into bowl. Set aside. Put egg, shortening, salt, orange rind, sugar and orange juice into blender or food processor. Cover and process until rind is grated fine. Add nuts and cranberries and process only till roughly chopped. Mix this with the dry ingredients in bowl only until blended. Spoon into prepared pan. Bake 50-60 minutes until toothpick comes out clean. Makes one large loaf or 2-3 smaller loaves.
