4 boneless 1/4" pork chops
1/3 C green pepper, chopped
1/3 C onion, thinly sliced
1 14.5 oz can beef broth
1 8 oz can pineapple chunks
1/4 C ketchup
2 T brown sugar
1 T cider vinegar
2 T cornstarch
3 T cold water
Cooked white rice

Directions:
Directions:
Salt/pepper pork chops and lightly brown in skillet. Remove and keep warm in oven. In same skillet saute green pepper and onion for 2 minutes, until tender. Stir in beef broth, pineapple-undrained, ketchup, brown sugar and vinegar. Bring to a boil. Return pork chops to skillet and reduce heat, cover and simmer for 10-15 minutes. Combine cornstarch and water until smooth; stir into skillet. Bring to a boil; cook for 1-2 minutes until thickened. Serve over white rice.
