6 egg whites
2 cups sugar
1 tsp vanilla
1 tsp vinegar

Preheat oven to 275°a slow oven. Beat egg whites until stiff enough to hold up in peaks; beat in 2 tablespoons sugar at a time, 3 times, beating thoroughly each time. Add vanilla, vinegar, and the rest of the sugar, beating all the time. Spoon all of the mixture onto a large greased [Pam] cookie sheet, making a “bowl” of the schaum to receive the filling, about 8-10 inches across.

Bake about 1 hour. * [I turn the oven off and leave it in the warm oven until I am ready to serve. This keeps the meringue crispier, especially on a humid day.]

When cool, remove the schaum with a cake frosting spatula onto a large serving platter with a rim. It is ok if the schaum cracks a bit.

Add 2 pints Gilles’s custard [Put in frig before dinner to partially thaw] to ‘bowl.’ Top with thawed frozen strawberries, blueberries or raspberries or any combination of the above. Top with ready whip real whip cream and fresh whole strawberries. For special occasions, use long party candles or sparklers for a real hit!
