1/4 cup olive oil
1 garlic clove, crushed
1/2 teaspoon salt
1/2 teaspoon black pepper
3 medium onions, quartered or sliced
2 pounds small round red potatoes, cut into 1/4" thick slices
1-1/2 pounds fresh green beans

Directions:
Directions:
Stir together first 4 ingredients; set aside 1 tablespoon oil mixture. Place onion and potato slices in a greased pan. Stir. Roast at 450º on top rack of oven 20 to 25 minutes, stirring occasionally.
Add green beans to pan; drizzle with remaining oil mixture and stir. Roast 15 to 20 more minutes or until vegetables are tender, stirring occasionally.
