1 1/2 c flour,
1 1/2 tsp baking powder,
1/2 tsp baking soda,
1 tsp cinnamon,
2 med apples (peeled and chopped),
2 tbsp canola oil,
3/4 c granulated sugar,
1/4 c Egg Beaters,
1/4 c plain nonfat yogurt,
1 c fresh or frozen cranberries,
1/2 c chopped walnuts (optional).

Directions:
Preheat oven to 350º.Mix flour, baking soda, baking powder, and cinnamon. Set aside. Toss apples with oil in a large bowl until apples are evenly coated. Stir in sugar. Add Egg Beaters and yogurt. Mix well. Add flour mixture. Stir just until moistened. Gently stir in cranberries and walnuts. Spread batter evenly in an 8 1/2 x 4 1/2 inch greased loaf pan.

Bake about one hour or until pick inserted in middle comes out clean. Cool in pan ten minutes then remove from pan and cool completely on wire rack.
