2 (8-ounce) packages wild rice
6 cups water
1 teaspoon salt
1/2 cup butter or margarine, softened
lemon wedges (optional)
fresh parsley sprigs (optional)

Directions:
Directions:
Rinse rice under cold running water until water is clear. Combine rice, 6 cups water, and salt in a heavy saucepan; bring to a boil. Cover, reduce heat to low, and cook 1 hour or until rice is tender. Add butter, stirring well.

Pack rice into an 8-cup ovenproof mold. Cover the mold with aluminum foil, and refrigerate overnight.
Bake at 350 degrees for 30 minutes. Unmold onto serving platter. Garnish with lemon and parsley, if desired.
