1 lb. carrots, grated or shredded
1 small onion, diced, grated or shredded
1 c. matzoh meal
1/2 tsp. salt
3/4 c. margarine

Directions:
Directions:
Mix all of the ingredients in a bowl. Put on a sheet of aluminum foil and form into a loaf. Wrap the loaf in the foil and bake on a cookie sheet at 400 degrees for one hour. Slice and serve.

You can bake these in advance and reheat the day of. I like to cook them a little longer and serve them well done.
