I ‘/2 tablespoons olive oil (preferably
extra-virgin)
‘/2 pound yellow summer squash, cut into ‘/2-inch pieces
‘/2 pound zucchini, cut into ‘/2-inch pieces
I small onion, chopped
¼ pound tomatoes, peeled, seeded, and chopped
‘/2 teaspoon dried marjoram, crumbled

In a large heavy skillet heat the oil over moderately high heat until it is hot but not smoking, add the summer squash, the zucchini, the onion, and salt and pepper
taste, and sauté the mixture, stirring, for 2 minutes. Add the tomatoes and the marjoram, steam the mixture, covered, for 1 minute, and sauté it, uncovered, stirring, for 2 to 3 minutes, or until the vegetables are just tender. Serves 4.
