2 3/4 c. water,
1 c. uncooked rolled oats,
1/2 c. egg substitute,
1/4 c. sugar,
1 1/3 c. skim milk,
1/2 tsp. vanilla,
1/8 tsp. salt,
1/2 c. dried fruit ( your choice),
1/2 tsp. cinnamon.

Boil water in covered saucepan. Stir in oats and return to a boil for about one minute. Remove from heat. Cover and set aside.
In large bowl, mix the next five ingredients. Add cooked oatmeal, dried fruit and cinnamon to egg mixture and mix well. Pour into 8x8 square pan coated with vegetable cooking spray. Place in a larger pan of hot water. Bake at 350º for one hour or until set.
