10 eggs (for a healthier version use eggbeaters)
1 lb of thin spaghetti (wheat is healthier)
1 1/2 cups of grated Parmesan cheese
3-4 tsp of pepper (depending on your preference)
3/4 pkg. of pepperoni (turkey if you're going healthy)
1 tsp oregano

In a large bowl, mix eggs, grated cheese, oregano, pepper and pepperoni. Cook spaghetti according to pkg. (it should be done al dente because it is going to cook with egg mixture too). Drain and add to egg mixture and mix well. Pour into a large nonstick pan (Make sure you spray with nonstick cooking oil). Cook on low- medium heat for approximately 10 minutes. Lift the edges to check underneath, it should be golden brown. To flip the pie, use a large dinner plate. Place the plate over the pie and flip. Then gently slide the pie back into the pan. (I recommend spraying the pan again) Tuck loose ends back under pie with a spatula. Cook this side for another 10 minutes until underside is golden brown and pie is firm to the touch. Let cool for about 5 minutes before cutting and serve.

The healthy version of this recipe is really good too. I sometimes slice up home made meatballs and add them to the mixture. It is a good appetizer that you can make ahead of time and reheat when you need it. When serving I slice it into 1-2 inch cubes. Enjoy!!!!
