1 lb. chicken cut into bite size pieces, 1 box Zatarain's black beans & rice, 1 can (10 oz.) Rotel diced tomatoes with Lime juice and cilantro, 1 small bag of frozen corn, & 1 can of chicken broth.

Cook chicken until no pink shows. Dump chicken broth, black bean & rice dinner, Rotel, corn. cook for about 30 to 45 min. Stir occasionally. While that cooks, wash cilantro. (fill big bowl with water & put cilantro in bowl to soak, pull out & rinse) then chop. Then drop into pot & stir.

To serve, put shredded cheese & crush tortilla chips on top. Optional taco sauce or hot sauce. To make in slower cooker, cook chicken then put everything in the slower cooker & turn on low for 8 hours.
