1 lb. ground meat
1 (sm.) onion
1 clove garlic
2 T. oregano
1 lemon, juiced
1 can tomato paste

Directions:
Directions:
1 lb. ground beef will make 6 meatballs. Braise meatballs in a little olive oil. In a 1 qt. pan, fry onions & garlic in a small amount of olive oil. Pour off extra oil & add tomato paste & approximately 2 cans of water. Add oregano & lemon juice. Heat together then add meatballs. Cook 30 min. on low. Serve on spaghetti.

Judy is the wife of Jack Hollenshead, Jr., the Editor of this cookbook. She is the daughter-in-law of the late Jack & Dorothy (Bellew) Hollenshead. This recipe was from an Italian neighbor who lived across the street when I was growing up in Austin, Texas. The spaghetti sauce has a wonderful flavor and is well worth the trouble to make it from scratch. Sauce and meatballs can be frozen.
