2 cups chopped dates
1 tsp baking soda
1 cup boiling water
1-2/3 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 large egg
1/4 cup vegetable oil
1 cup packed brown sugar (light or dark)
1 tsp vanilla
2 cups coarse chopped walnuts

If dried dates are used, Combine first 3 ingredients and let stand until lukewarm, about 20 minutes. Mix all ingredients by hand. Bake 55-65 minutes at 350F. Test with toothpick.
