3/4 c. rice
1/4 tsp. salt
2 c. water
6 tbsp. oil
2 tbsp. white wine vinegar
2 tbsp. light soy sauce
1/4 tsp. pepper
1/4 tsp. tumeric
1/4 lb. spinach, washed, trimmed and dried (about 4 cups packed
1/2 c. sliced green onion
4 slices bacon, cooked and crumbled

Directions:
Directions:
Simmer Rice, covered in salted water until rice is tender (about 20 minutes) Drain. Combine oil, vinegar, soy sauce, pepper and turmeric, then stir into warm rice. Tear spinach into small pieces. Toss spinach, onion and bacon into rice. Refridgerate.
