1/4 cup Dijon mustard
2 T olive oil
2 T fresh lemon juice
4 garlic cloves, minced
1 T minced fresh rosemary (or 1 1/2 T dried)
1 T minced fresh thyme (or 1 1/2 T dried Thyme)
1 T minced fresh marjoram (or 1 1/2 T dried)
1 t salt

8 lamb loin chops

Directions:

combine ingredients in a small bowl. Coat the chops, place in large baggie overnight (or at least an hour). Smoke or grill chops until medium rare.
