6 large chicken breasts
8 ounces of milk
1 large container of Italian breadcrumbs (Progresso works well)
2 (8 ounce) balls of fresh mozzarella
Vegetable Oil for frying in a large pan *Marinara Sauce* see in sauce section of book

Cut Chicken Breasts into two. You want the breast to stay intact...not to cut it down the middle. Place a sliced breast in between two pieces saran wrap. Using a meat tenderizer, pound the piece of breast until it is about half of its original width. Repeat with all the chicken.
In a wok or large pan, pour in vegetable oil 3/4 full. Put pan on medium to high heat. Give the oil about five minutes to heat up. Go to next step.
Place milk in a bowl and breadcrumbs on a plate. Dip each chicken breast entirely into the milk then roll in the bread crumbs until fully covered repeat with all breasts.
Preheat Oven to 350
Fill your now heated pan with 2-3 pieces of chicken breast for about 3-4 minutes. The chicken should come out when golden brown or a little darker if you like crispier chicken. As you take each piece out, put on a plate with a paper towel so that excess oil comes off. Once dried put the chicken on a cookie sheet. Repeat until all the chicken is on a cookie sheet. I usually have two cookie sheets when done.
Slice the mozzarella balls into a total of 12 thick slices. Place one piece of mozzarella on each piece of chicken. Cover chicken and cheese with marinara. Try to keep the sauce strictly on the chicken to reduce later clean up.
Cook each cookie sheet for about 20 minutes or until cheese has melted.
