2 c. sugar
4 eggs
1 c. Wesson oil
2 c. flour
1 tsp salt
2 tsp soda
1 1/2 c. grated carrots
1 tsp vanilla


Filling/Frosting

1 8oz cream cheese softened
1/2 to 1 lb powder sugar
1 stick margarine or butter
1 c. chopped nuts

Directions:
Directions:
Cream together sugar, eggs and oil. Add the dry ingredients and mix until creamy. Add the grated carrots and vanilla. Pour into greased and floured pans. (2- 8 in rounds or 8x11) Bake at 325º for 45 minutes. After cake has cooled, fill and or frost with the cream cheese, powdered sugar mixture.
