Cake:

1 c. cooking oil
2 c. sugar
3 c. flour
2 eggs, well beaten
1 c. nuts, chopped
1 tsp. soda
2 tsp. vanilla
1/2 tsp. salt
3 c. apples, chopped and peeled

Caramel glaze:

1 c. brown sugar
1/2 c. butter
1 tsp. vanilla
1/4 c. cream or evaporated milk

Cake:

Combine oil and sugar; add eggs and vanilla. Sift flour, salt and soda together; add to first mixture. Stir in apples and nuts; mix well. Pour into tube or oblong 13" x 9" pan and bake at 325º for 65 min. or until done.

Caramel glaze:

Place butter and sugar in double boiler; allow to melt and mix well. Add cream and bring to a full boil; cool and add vanilla. Spread evenly over cooled cake.
