"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 lb. sausage
1 med. onion, diced
2 cloves garlic
1 large can chicken broth
1 small can chicken broth
1 large can crushed tomato
3-4 leaves chopped basil
1/2 c. celery
1/4 c. mushrooms
1 t. chopped parsley
1 pkg. cheese tortellini

Directions:
Directions:
Brown sausage. Add onion and garlic saute until soft. Add chicken broth and tomato - bring to boil then simmer 20 minutes. Add all other ingredients - simmer 20 more minutes.

Personal Notes:
Personal Notes:
I use turkey sausage and no fat chicken broth. I always add more celery and mushrooms but that depends on your tastes. I usually add all ingredients except for the tortellini. When we are ready to eat, I bring the soup to a rolling boil, add the tortellini and cook for about 5 minutes.

The broth freezes well so all you have to do is thaw and add tortellini!!
