2 c. all purpose flour
2/3 c. granulated sugar
1 tbsp. baking powder
1/2 tsp. salt
2 eggs
3/4 c. milk
1/3 c. vegetable oil
1 tsp. vanilla extract
1 (12 oz.) can apple cake and pastry filling

Topping:
1/4 c. (1/2 stick) butter, melted
1/4 c. granulated sugar
1 tsp. ground cinnamon

Preheat oven to 375ºF. Line muffin pan.
In medium bowl, combine flour, sugar, baking powder and salt. In small bowl, whisk together eggs, milk, oil, and vanilla; stir in apple filling. Add to flour mixture all at once; stir until just combined. (Do not overmix). Bake 20-22 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes in pan. Meanwhile, for topping, place butter in small bowl. In another small bowl, combine sugar and cinnamon. Dip muffin tops in butter, then cinnamon sugar. Serve warm or at room temperature.
