1 c chicken broth - cooled
2 tbsp soy sauce
2 tbsp cornstarch
1 cup chicken - cut in bite size pieces
cooking oil
4 celery stalks - chopped
2 onions - chopped
16 oz bamboo shoots
4 oz mushrooms

Directions:
Directions:
Mix first three ingredients and set aside. Saute chicken in oil til cooked. Remove chicken and add 2 more tbsp oil. Saute onions and celery for 1 min. Add mushrooms and bamboo shoots. Stir broth mixture & add to vegetables. Cook til sauce thickens. Add chicken and stir til sauce is clear. Serve immediately on rice or chow mein noodles.
