Directions:
Preheat oven to 350º. Mix thoroughly butter, sugar and vanilla. Work in flour and salt until dough holds together. (If dough is dry, mix in 1-2 T. light cream.) Mold dough by tablespoonfuls around date, nut, cherry or a few chocolate pieces. Place cookies about 1" apart on an ungreased cookie sheet. Bake 12-15 min. until set but not brown. Cool, then dip tops of cookies into icing and into coconut.

Mix ingredients together till smooth. Stir in a few drops of food coloring if desired.

Personal Notes:
Personal Notes:
This is a Betty Crocker recipe. I've made these for wedding receptions, coloring the icing to match the colors in the wedding but leaving the coconut white. I use maraschino cherries for the center (drained thoroughly on paper towels). Flatten dough in the palm of one hand, place the cherry in the center and draw the dough up around the cherry and pinch together, covering it completely. Bake as directed. Store in a cardboard box, covered loosely. The cherry still has liquid in it and will soften the dough too much if in an airtight container.
