Blueberry Banana Bread Recipe

3/4 c sugar
1/3 c regular shortening (Crisco)
3 eggs
1/3 c milk
1 1/2 c mashed bananas (3 or 4 ripe bananas)
3 c sifted flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 c finely chopped nuts (optional)
1 c fresh, frozen, or dry packed blueberries

Preheat oven to 350º. Mix sugar, shortening, & eggs together. Beat in milk & bananas. Add flour, baking powder, baking soda, & salt. Stir until all ingredients are moistened. (Do not overmix). Fold in blueberries and nuts. Spoon dough into 9x5x3" loaf pan. Spread the dough lower in the center of the pan. Bake for 1 1/4 hrs. until tester comes out clean. Remove from the pan to the rack fo cool thoroughly before cutting into slices.

You can add a bit more banana and blueberries to make a tastier bread but it may take longer to bake.
