1 1/4 c. sugar
1/2 c. margarine or butter, softened
2 eggs
1 1/2 c. ripe bananas (3 to 4 medium), mashed
1/2 c. buttermilk
1 tsp. vanilla
2 1/2 c. all-purpose flour*
1 tsp. baking soda
1 tsp. salt
1 c. nuts, chopped (if desired)

Place oven rack in lowest position. Heat oven to 350. Prepare muffin pan with either cupcake holders or spray with non-stick spray.
Mix sugar and margarine in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in remaining ingredients (except nuts) and mix just until moistened. Stir in nuts. Dip into muffin pan. Fill each muffin about 3/4 full. Bake for 25-30 minutes.
