3 eggs
1 cup oil
3 cups grated zucchini
2 cups sugar
1 tsp baking soda
1/2 tsp baking soda
3 cups flour
3 tsps cinnamon
1/2 tsp nutmeg
1 tsp salt
1 cup chopped dates
2 tsp vanilla

Beat eggs until frothy and light, add oil, vanilla, zucchini, and sugar to beaten eggs. Sift flour and add baking powder and baking soda, salt, cinnamon, nutmeg, and date mixture. Bake at 325 for approximately 1 hour 15 mins. Remove from pan and cool immediately.
