4 oz. cream cheese, softened
3/4 c. milk
2 tbsp. flour
1/4 tsp. salt
12 eggs
2 1/4 shredded cheddar cheese
2 c. chopped meat and veggies - vary as desired
1/2 c. thinly sliced onions; green chilies, or cooked mushrooms

Grease jelly roll pan, line with parchment paper, grease paper. In small bowl beat cream cheese and milk until smooth. Add flour and salt, mix. In large bowl, beat eggs until blended. Add cream cheese mixture, mix well. Pour into pan, bake at 375º for 25-30 minutes until puffed and light brown. Remove from oven, layer with 1 c. cheese, omelet toppings, and 1 c. cheese. Roll up, peeling off paper. Sprinkle with rest of cheese, bake 3-4 minutes until cheese is melted. Cut into 12 slices and serve hot.
