1 whole- wheat bread slice
2 T. grated Parmesan cheese
2 eggs
1/2 c low fat milk
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. dried basil
1/8 tsp. dried oregano
2 medium zucchini (2 per lb.)
1 tsp. margarine
3 oz. cooked ham, diced (3/4 c)
1/2 c. chopped onion
2 T. chopped fresh parsley

Tear bread and put into blender, making fine crumbs
Pour crumbs into small bowl, stir in Parmesan cheese and set aside. In a medium bowl beat eggs until blended. Stir in milk, salt, pepper, basil and oregano; set aside. Preheat oven to 350º. Cut zucchini into 1/4- inch- thick slices. Melt margarine in a large skillet and saute zucchini about 5 minutes, stirring frequently. Arrange sautéed zucchini in bottom of a 9 inch pie plate. Sprinkle ham, onion, and parsley over zucchini. Pour egg mixture over. Sprinkle crumb mixture over top. Bake 30 minutes or until a knife inserted into center comes out clean. Let stand 5 minutes and cut into wedges.
