2 cups flour
1/4 cup sugar
3 tsp baking powder
1 tsp salt
1 egg
1 cup whole milk
1/4 cup vegetable oil or melted shortening

Directions:
Directions:
Stir first four ingredients together in bowl. Make a "well" in the center of the mixture. Beat egg slightly with fork in another bowl. Stir in the milk and oil. Pour egg mixture all at once into the "well" in flour mixture. Stir just until flour is moistened. Batter will be slightly lumpy. Do not overmix.
Fill greased muffin cups 2/3 full. Bake 20-25 minutes at 400 degrees until golden brown.

I demonstrated this recipe at the county 4-H contest and continued to make these delicious muffins for my parents, sometimes adding jelly to the center of the muffin prior to baking. Mother and Dad would always offer words of praise regarding the quality of the muffins.
