9 c. water
2 cinnamon sticks
1/2 t. black peppercorns
6 cloves (no more)
1 four-inch piece of fresh ginger, sliced
10 cardamom pods (lightly crushed to open some)

4 bags Earl Grey tea
4 bags Darjheeling or black tea
(use decaffinated tea if you prefer)

In a saucepan, bring water and spices to a low boil, simmering for 20 minutes. Notice the amazing fragrance that fills your home!
Remove from heat and add the 8 tea bags; allow to steep for 30 minutes.
Remove tea bags, then pour the tea through a strainer to remove spices. Sweeten to taste with organic sugar.
This is the chai tea base, which can keep in the frig and then be used as you like.
For an individual beverage, start with 1/3 c. of chai base and add whole milk, lowfat milk, or soy milk to taste. Heat up, or stir in ice if you prefer it chilled.
