1 c warm water
1 pkg. or cake yeast(dry or compressed)
3 c sifted flour
1 1/2 tsp. salt
2 tbsp. Olive or salad oil
2 tbsp. chopped parsley
2 tbsp. grated Parmesan cheese
1/2 lb. Mozzarella, Monterey or Cheddar
1/2 c (6 oz.) tomato paste
1 c (8 oz.) tomato sauce
1 tbsp. crushed oregano
1/2 tsp. salt
1 small clove garlic
1 small onion

For the sauce: Mix all together and heat in a small saucepan. For pizza toppings use pork sausage, anchovy, Italian sausage, mushroom and ground beef that is cooked well, seasoned and drained of all fat. Any of these toppings may be also combined as desired. Measure water in bowl & sprinkle or crumble in yeast. Let stand a few mins.; stir to dissolve. Add about half of the flour. Beat smooth. Add oil,salt & flour. Mix in with spoon until the flour begins to separate from the sides of the bowl. Beat hard. Sprinkle top with a little flour and cover with waxed paper. Let stand about 5 to 10 min. Preheat oven 400ºF. Arrange half of the cheese on the two circles of dough. Spread with Pizza sauce. Arrange rest of cheese; top with choice of Pizza Toppings. Sprinkle with oil and parsley & parmesan cheese if desired. Bake for 20 to 25 minutes.

I used this recipe for many years until the premixed dough was available; which cutdown considerably on the time required to prepare a pizza for dinner. My family always enjoyed Pizza!
