2 t. fresh parsley, chopped
2 T. fresh basil leaves, chopped
1 t. dried oregano
5 T. wine vinegar
3 T. onion, chopped
3 garlic cloves, peeled and minced
1 lb. fresh green beans
1/3 c.extra virgin olive oil
salt and freshly ground pepper to taste

Directions:
Directions:
Place parsley, basil, oregano and vinegar in a bowl large enough to accommodate the green beans. Add onion and garlic.Stir and let steep for at least 30 minutes.

Snap off ends of green beans. Rinse in cold water and drop into boiling salted water. Cook 3 to 5 minutes; beans should be very firm. Drain and, while hot, add beans to the bowl and marinate for at least 1 hour or up to 6 hours. Stir occasionally.

Before serving, add olive oil and season with pepper. Toss. Serve at room temperature. Can be made a day ahead of time.
