1 (5 lb.) beef tenderloin
1 lb. mushrooms, chopped
4 T. butter
1/2 c. celery,chopped
1/2 c. onion, chopped
1/4 c. green pepper, chopped
1 t. salt
1/2 t. freshly ground pepper
1/4 t. dried sage
1/4 t. dried thyme
2 T. flour
2 T. fresh parsley

Directions:
Directions:
Starting at the widest end of the tenderloin. Slice horizontally from end to end and spread apart.

Saute mushrooms in butter until liquid evaporates. Add celery, onion, green pepper, and seasonings. Saute until vegtables are tender. Blend in flour and cook 1 minute. Stuff mixture into pocket of beef.

Secure opening with skewers and lace with string. Bake at 325º for 20 minutes per pound for medium rare. Garnish with parsley.
